Albumoses and peptones are obtained by peptic digestion, the latter being termed pepticpeptones; tryptic digestion also produces peptones.

They are mainly carbohydrates such as starch and sugar, proteids in the form of globulins or albumoses, and in many cases fats and oils, while certain other bodies of similar nutritive value are less widely distributed.

The primary products of the dissociation of albumins are the albumoses, characterized by not being coagulable by heat, more soluble than the albumins, having a far less complex composition, and capable of being " salted (7) out " by certain salts, and the peptones, similar to albumoses but not capable of being " salted out "; moreover, peptones are less complex than albumoses.

Albumoses and peptones are white powders, readily soluble in water, with the exception of the hetero-albumoses - a subdivision of primary albumoses.

Chemically they resemble the albumins, being split up by acids or ferments into albumoses, peptones and amino-acids, forming salts, and giving N =C6 1 The pyrimidin ring is numbered 2C "C5.

Certain of these are alkaloids, others appear to be albumoses.

Weir Mitchell and others have shown that serpent venom consists chiefly of albumoses, and the toxins formed by infective bacilli have a somewhat similar chemical nature.

Such a powder gives a proteid reaction, and is no doubt largely composed of albumoses, hence the name toxalbumoses has been applied.

In the case of diphtheria Sidney Martin obtained toxic albumoses in the spleen, which he considered were due to the digestive action of an enzyme formed by the bacillus in the membrane and absorbed into the circulation.

These include such bodies as pepsin, diastase, the pancreatic ferments, papain, the pine-apple ferment, taka-diastase and others, and serve to convert starch into saccharine substances, or albumen into peptone and albumoses.
